Barbeque Development
I love to cook over embers and charcoal. During lockdown, I set up a burner out the back of my shed and made my own totara charcoal. It turned out excellently and it's a satisfying thing to cook over your very own charcoal!
Being a chef, it was an obvious progression to want to design my own BBQ which draws on many of the styles of cooking I have experienced during my travels. The goal was to take the essence of each, and create a Swiss Army knife type solution where each component could swing in over the embers and be fully adjustable.
The engine room of this beast is the log basket. Nothing worse than running out of heat, but this system (based on an Argentinian design) means even when cooking starts you can still be producing fresh hot coals right through to dessert! Simply rake them under the paella pan or Argentinian grill. If you want to cook over charcoal, you can simply remove the log basket, place the charcoal basket on the plate and, with the satay stick holder, you are good to go.
Designing this BBQ has given me so many exciting ideas - I’m currently also developing some other ones, including a Hibachi table top unit with adjustable heat function and a quick-to-heat pizza oven.
